Black Bean Brownies (Gluten Free)

We were at a homeschool function a month of so ago, and we had these awesome little confections.  Now we can not get enough.  I am sure that telling myself they contain beans which = protein & fiber and that they are healthy is definitely NOT going to help me with my swimsuit cause.  But they are really the fudgiest Brownies I've ever eaten and so yummy!  And gluten free!!

So--if you are looking for something moderately healthy, packed with fiber and protein to bring to your Fourth of July picnic---look no further!

First, you will need to grease an 8x8 pan and preheat your oven to 350 degrees.

Next, you will need 1 15.5 oz. can of black beans (rinsed & drained) and three eggs in your blender.

Next, add 3 tablespoons of vegetable oil, 1/4 cup cocoa powder, pinch of salt, 1 teaspoon vanilla extract, and1/2 cup of white sugar. You can also add 1 teaspoon of instant coffee if you so desire.  

Blend it up until it's smooth.
Pour it into your 8x8 pan.
Top with 1/2 cup of chocolate chips, if you want.
Or, if you'd rather keep it healthier-ish, top with your favorite nuts :-)

Bake until the sides pull away from the pan,
about 30 minutes.
