Warm Green Bean and Potato Salad

This is one of my favorite side dishes.

My Sicilian grandmother, my Naunie, used to always make this for her barbecues.

Now my mom always makes it when we come up to the lake.


4-5 potatoes
1 lb. green beans, cleaned and cut in 1 inch pieces
1/2 red onion, chopped
Good Seasons salad dressing or other bottled or homemade Italian dressing
a few romaine leaves

1.  Boil water and cook potatoes whole, in skin until tender.

2.  Boil water and blanch green beans.

3.  Peel cooked potatoes and cut in 1 inch cubes.

4.  Put boiled potatoes and blanched green beans in a bowl.  Add red onions.

5.  Toss with Italian dressing to taste.

6.  Serve immediately OR let it sit out on the counter (covered) until ready to serve.

7.  Serve over broken romaine leaves.
