Shrimp & Grits

I have to hand it to my Southern friends, Shrimp & Grits is one of the most delicious dishes ever!

Ingredients

3 tbsp fresh lemon juice
2 tbsp hot sauce (we use Frank's Red Hot)
1 1/2 lbs. peeled and deveined large shrimp
4 slices of bacon, cooked and chopped
1 cup chopped white onion
1 green bell pepper chopped
3 garlic cloves minced
1 cup chicken boullion
1/2 green onions (scallions) chopped and divided
5 cups of water
1 1/2 cups of grits
1 tbsp butter
1 tsp salt
3/4 cup sharp cheddar cheese


1.  Combine cleaned shrimp with lemon juice and hot sauce and set aside.

2.  Bring a pot of salted water (5 cups or follow directions on grits package) to a boil.  Gradually add grits.  Simmer until thick, add butter and salt.

2.  Cook bacon in large skillet.  I keep a package of bacon in my freezer just for recipes.  I cut off pieces as I need them and fry them already chopped.  Drain some of the bacon fat into a can and add the onion, bell pepper and garlic to just a thin coating of bacon drippings in pan.  Cook five minutes or until tender, stirring occasionally.

3.  Stir shrimp, broth and 1/4 cup green onions into onion, pepper and garlic mixture.  Stir frequently.  Cook until shrimp are pink.

4.  Serve the shrimp mixture over the grits and top with shredded cheddar cheese and the rest of the green onions.  Enjoy!
